Not sure what to do with all those beets? And cabbage? Why not try...

Winter Borscht
1 lb pork, chicken or beef - chopped
1 cup onion chopped
Brown in oil (if desired) in a large soup pot

8 cups water
2 cups potatoes (chopped)
1/2 head cabbage (shredded)
1 cup beets (chopped or shredded)
1/2 cup carrots
1/2 cup pearl barley
2 bay leaves
1/4 cup fresh dill or 2 Tbsp dried dill
pepper, salt, garlic powder to taste

Add and bring to a boil. Cover and simmer until all vegetables are tender. Simmer longer or let sit overnight for great flavor. Feel free to increase the amount of veggies! A food processor makes this easy!
Enjoy!
